Every ingredient in this salad is simple yet exquisite. Tomatoes are a summer produce so during the winter time, it's best to enjoy the tomatoes cooked. In this recipe, we roast the tomatoes until it's soft, sweet, and juicy. We also reduce the balsamic vinegar until it's sweet, too. Pair it with fresh basil and soft mozzarella chunks. Delicious! Serve it as an appetizer or as a side.
