Springs rolls (gỏi cuốn) will always be a dish that brings me back to my Vietnamese roots. There's nothing quite like sitting around a bunch of fresh ingredients and rolling spring rolls with family and friends!
I kept this recipe traditional by using shrimp, pork belly, rice vermicelli noodles, red leaf lettuce, mint, cilantro, bean sprouts, and cucumbers with a mixed Vietnamese fish sauce for dipping.
