This savory pumpkin puree complemented the air-fried pork chops and kale pumpkin skin saute so well. Making pumpkin puree from scratch is so easy and extremely tasty. Also, look at the beautiful light orange color!
I did my best to incorporate all parts of the pumpkin. The skin was used in the saute, the seeds were set aside to roast at a later time, and, of course, the actual pumpkin was pureed into creamy goodness.
