Protein Berry Waffle with Greek Yogurt Lemon Sauce

Enjoy a weekend brunch at home with this protein waffle recipe! The crunchy waffle is paired with sweet berries and a tart Greek yogurt lemon sauce.

Ingredients
  • 1 cup Kodiak Cakes Protein Packed Buttermilk Flapjack and Waffle Mix
  • 1 cup water
  • 1 Tbsp oil
  • Handful of raspberries and blackberries
  • 1/2 cup full-fat, plain Greek yogurt
  • Zest of 1/2 lemon
  • Lemon juice of 1/2 lemon
  • 1 tsp vanilla extract
Instructions
  1. Spray the waffle maker with cooking spray.
  2. Preheat waffle maker at maximum heat.
  3. Whisk together the waffle mix, water, and oil in a bowl. 
  4. Once waffle maker is hot, pour in batter (batter makes two waffles).
  5. Close waffle maker and cook for 4-5 minutes.
    Note: The protein waffle will take longer to cook than regular waffles! It has a higher water content and will release steam for a few extra minutes than regular waffle batter. 
  6. Once you see little steam being released from the waffle maker, open. Waffle should be golden in color and should come off the waffle maker easily without leaving any residue.
    Note: If it's hard to get out, close the waffle maker and continue cooking.
  7. Put your waffle on a plate and repeat steps if you're making a second waffle.
  8. Time to make the sauce! 
  9. In a bowl, whisk together the yogurt, lemon zest, lemon juice, and vanilla extract.
  10. Taste and adjust as needed. Here are some suggestions to tweak it to your liking:
    1. Add more lemon juice and zest if you want it more tart.
    2. Add 1 Tbsp of water if you want a thinner consistency.
    3. If it's too sour, add more yogurt.
    4. If you want it sweetened, add some honey.
  11. Top waffle with the lemon yogurt sauce and berries.
  12. Enjoy!
