Blistered Shishito Peppers

Blistered shishito peppers make a great snack, appetizer, and side dish. They're not spicy at all but has a nice peppery taste to them. Don't forget to squeeze some lemon juice over them for a citrus kick!

Ingredients
  • 24 shishito peppers
  • 1 Tbsp olive oil
  • 1/8 tsp salt
  • 1/8 tsp pepper
  • Zest of 1/2 lemon
  • Juice of 1/2 lemon
Instructions
  1. Heat skillet to medium high heat.
  2. Add shishito peppers, oil, salt, and pepper in a bowl and toss until peppers are evenly coated.
  3. Once skillet is hot, throw peppers into the skillet. Evenly distribute the peppers across the pan.
  4. Cook for 3-5 minutes total. Monitor the peppers throughout the entire cooking process and constantly flip them over with a pair of tongs to evenly blister (darken) them. Once they are all partly blistered and have softened, remove from heat.
  5. Move peppers from the pan and into a serving plate.
  6. Zest 1/2 lemon over the peppers.
  7. Squeeze the juice of the 1/2 lemon over the peppers.
  8. Serve and enjoy!
