Bite-Size Beef Tostadas

These bite-size tostadas are perfect for your next party or gathering! With store-bought round chips, guacamole, and pico de gallo, the only thing you need to quickly cook is the ground beef. Layer all of the ingredients on the chips and enjoy!

Cooking Tips
  • Toppings: There is a lot of flexibility with what toppings you can use. Corn, beans, and cabbage would also be delicious additions! 
  • Protein: Feel free to switch out the protein with whatever you desire such as chicken, shrimp, and tofu!

Ingredients
  • 1 Tbsp avocado oil
  • 1/2 small yellow onion, diced
  • 2 garlic cloves, minced
  • 1 lb lean (96% lean, 4% fat) ground beef
  • 1 Tbsp taco seasoning
  • 1/2 tsp cayenne (optional)
  • 24 tortilla round corn chips
  • 6 oz store-bought guacamole
  • 1/4 head iceberg lettuce, shredded
  • 4 oz store-bought pico de gallo
  • 1/4 bunch of cilantro, chopped
  • Drizzle of your favorite hot sauce or salsa
Instructions
  1. ​Heat skillet to medium.
  2. Once the skillet is warm, add avocado oil.
  3. Add onions, cook for 2 minutes.
  4. Add minced garlic, cook for another 2 minutes. 
  5. Increase heat to medium-high and add ground beef.
  6. With a wooden spoon, break up the beef and mix well with the onions and garlic for a couple of minutes.
  7. Add taco seasoning. If you would like to make it spicy, add cayenne pepper as well.
  8. Continue to stir and break up beef for another 8 minutes, or until beef is no longer pink. Turn off heat and set aside.
  9. On a couple of serving platters, lay out the tortilla rounds and leave some space between each chip.
  10. Put guacamole into a small Ziploc bag, remove as much air as possible, seal the bag, and squeeze the guac into one corner of the bag. Snip off the corner with a pair of scissors and pipe the guac evenly over all the chips.
  11. With a tablespoon, scoop one tablespoon of cooked beef onto each chip.
  12. Scoop one teaspoon of pico de gallo onto each tostada.
  13. Top the tostadas with the shredded lettuce and cilantro.
  14. Drizzle your favorite hot sauce or salsa over the tostadas.
  15. Serve and enjoy!
